King's Arms Tavern Sweet Potatoes

List of Ingredients
- 3 lbs. sweet potatoes*
- 3/4 cup light brown sugar, packed, divided
- 3 Tbl. butter
- 1/2 tsp cinnamon
- 1/2 tsp freshly grated nutmeg
- 1/4 tsp salt
- 1 cup milk
Instructions
- Pre-heat oven to 400 degrees.
- Grease a 1 1/2 quart casserole.
- Cook sweet potatoes in boiling salted water until done; drain, peel and mash them.
- Stir all of the remaining ingredients except 2 Tbl of sugar.
- Turn the mixture into the prepared casserole and sprinkle with remaining sugar.
- Bake at 400 degrees for 30 minuts.* I have used a 2 lb. 8 oz. can of sweet potatoes, drained, instead of boiling my own sweet potatoes. It works well.
Final Comments
Serves 8-10 small servings.
