    King's Arms Tavern Sweet Potatoes

    The Williamsburg Cookbook, 3rd edition, 1978


    List of Ingredients


    • 3 lbs. sweet potatoes*
    • 3/4 cup light brown sugar, packed, divided
    • 3 Tbl. butter
    • 1/2 tsp cinnamon
    • 1/2 tsp freshly grated nutmeg
    • 1/4 tsp salt
    • 1 cup milk


    Instructions


    1. Pre-heat oven to 400 degrees.

    2. Grease a 1 1/2 quart casserole.

    3. Cook sweet potatoes in boiling salted water until done; drain, peel and mash them.

    4. Stir all of the remaining ingredients except 2 Tbl of sugar.

    5. Turn the mixture into the prepared casserole and sprinkle with remaining sugar.

    6. Bake at 400 degrees for 30 minuts.* I have used a 2 lb. 8 oz. can of sweet potatoes, drained, instead of boiling my own sweet potatoes. It works well.



    Final Comments


    Serves 8-10 small servings.
