Mashed Potato Pancakes

List of Ingredients
- 2 Cups leftover seasoned mashed potatoes
- 1/4 Cup finely chopped sweet onion
- 4-6 Tbl all purpose flour
- 1 Large egg
- 2 Slices crisp bacon, crumbled
- 1/4 Cup Parmesan cheese
- Pepper to taste
- Oil for frying
- 1-2 Tbl bacon grease if desired for added taste
Instructions
- Combine all ingredients except oil and bacon grease. Form into 6 patties and fry in hot oil in non-stick skillet over medium heat until golden brown on each side.
- Drain on paper towels.
Final Comments
For extra special treat mix some dillweed into sour cream and serve this as a sauce for the pancakes. It's a new life for tired leftovers.
