    List of Ingredients




    1/2 cup shortening
    2 cups white sugar
    2 eggs, slightly beaten
    1 box (15 oz) raisins
    1 cup walnuts
    3 cups flour
    2 cups sweetened applesauce
    1 teaspoon salt
    2 teaspoons baking soda
    1/2 cup hot water

    Use 3 teaspoons pumpkin pie spice or use the following combo of spices instead:
    2 teaspoons cinnamon
    1 teaspoon nutmeg
    1 teaspoon allspice

    Instructions

    Cream together the sugar and shortening.

    Add the beaten eggs, hot water, 2 cups of flour and the applesauce. Mix the remaining cup of flour with the walnuts and raisins in a separate bowl, then add the flour-nut-raisin mixture to the cake mixture. (You mix the raisins and nuts with the flour before adding to the cake mixture so the nuts and raisins do not rise to the top of the cake during cooking).

    Bake at 250 degrees for 2-1/2 hours.
