What can I say, I love food, it's how I make my living.I have spent 15yrs in the Mining Industry cooking in bush camps. I have had to satisfy all sorts of appetites. Yet, I have the freedom to be creative. Just to tell you a little about my job. I go into remote areas in Northern Canada and spend about 4-6 mths cooking for the crews. I do it ALL. Breakfast, Lunch and Dinner and all the baking. Lots and lots of baking. I get to work all by myself, all day doing what I love. I make all sorts of cookies and breads, pies etc. These guys eat ALOT. Dinner is usually 2 choices with all the extras. I am proud to say that almost everything I make is from scratch. Most of these recipes have been long years of trying to find the perfect one. I have tried many different variations of all our favourites and after many hits and misses the final one is the one I felt was the best. The critics are brutal believe me!!. You will see some recipes that don't have specific measurements, and that is because I cook for up to 60 people and the amounts would be too much so I just submitted the ingredients and they are easy to modify to your needs. I have scoured many different cookbooks as well. My favourite is The Bridge series. I have found some fantastic recipes in those. Some I will post with my own changes after testing them.
