Curried Carrot and Ginger Soup
List of Ingredients
3Tsp. Oil
3 Garlic cloves minced
1 Onion chopped
2 Tbsp. Ginger minced
1 Tsp. Coriander
1/2 Tsp. Cumin
1/2 Tsp. Each curry powder, salt and pepper
4 Cups of grated carrots
3C. Veggie or chiken stock
2C. Coconut Milk
Chopped cilantro for garnish
Recipe
In a saucepan heat oil with garlic, onion, ginger, coriander, cumin, curry, s&p for about 5 minutes or until onion is soft.
Stir in carrots. Add stock and bring to a boil. Reduce heat and simmer covered until carrots are soft.
When this is done blend this in batches in a mixer. Whisk in the coconut milk and then reheat and serve. Garnish with cilantro.
Makes about 6 servings.
