    Pineapple Margaritas For The Margahootie

    I can't remember who posted this any more, for some reason it's not here like I thought it was. But this makes for great drinks.

    List of Ingredients





    First; make the Pineapple
    Tequila
    2 Large just ripe pineapples; Trimmed,Peeled Core
    2-inch chunks.
    2 litre bottles gold tequila; ¥
    2 cones (about 5 oz. total) Mexican r
    sugar
    , or 2/3 cup packed brown sugar; (piloncillo)
    2 Whole vanilla beans

    Recipe



    In a large, decorative jar, combine the pineapple and tequila. Add the sugar and vanilla beans. Cover and let the tequila stand at room temperature, stirring when you feel the need, for at least 1 week. When you've topped up the jar with more tequila a couple times, the softened pineapple can be diced, warmed in butter with additional brown sugar to make an ice cream topping. I bet the pineapple would make a mean pineapple upside down cake too!
