    Dinner for one, two, or four, all done in one skillet.


    List of Ingredients


    • 2 bone-in pork chops (1/2" to 1" thick)
    • 1 large potato, peeled and sliced lengthwise
    • 1 tomato, thickly sliced
    • 1 small onion, sliced according to how well you like onions
    • 1 can green beans, undrained
    • Salt and pepper, to taste
    • Oil for skillet


    Instructions


    1. In a medium sized skillet, brown chops lightly on both sides in a small amount of oil. Sprinkle with salt and pepper and place a layer of the potato, onion, and tomato slices on top of each chop, seasoning each layer with salt and pepper

      Pour the undrained green beans around the "stacks" and season with additional salt and pepper. At this point you could add any leftover onion to the beans. Cover skillet, reduce heat and simmer for 15 to 20 minutes, or until potato is tender.

      If making more than two servings increase the amount of green beans, and other ingredients accordingly.

      Note: I always make 4 servings for the two of us, as it keeps and re-heats well and then we have enough for another night
