    Bethune Sweet Potato Pie

    List of Ingredients


    • You will need 3 un-baked single pie crusts.
    • 9 medium sweet potato or yams (about 4 pounds)
    • 1/4 cup light marg., softened
    • 1/2 cup granulated sugar
    • 1/2 cup firmly packed light brown sugar
    • 1/2 teaspoon salt
    • 1/4 teas. nutmeg
    • 2 eggs, well beaten
    • 2 egg whites
    • 2 cups skim milk
    • 1 Tbl. vanilla


    Instructions


    1. For filling, boil sweet potatoes until tender. Peel and mash.
    2. Heat oven to 350 degrees.
    3. Combine margarine, granulated sugar, brown sugar, salt, and nutmeg in large bowl.Beat at medium speed until creamy. Beat in sweet potatoes until well mixed.
    4. Beat in eggs and egg whites. Beat in milk and vanilla slowly. Spoon into 3 un-baked pie shells, using about 4 cups per shell.
    5. Bake at 350 degrees for 50 - 60 min or until set.
    6. Cool at room remp. before serving.
    7. Refigerate leftover pie.
