    Rich Cocoa Fudge

    List of Ingredients


    • 3 c. sugar
    • 2/3 c. cocoa powder
    • 1/8 tsp. salt
    • 1 1/2 c. milk
    • 1/4 c. butter or margerine
    • 1 tsp. vanilla
    • 1/2 to 1 c. pecans or walnuts, optional


    Instructions


    1. In 4 qt. saucepan, stir together suger, cocoa, salt & milk.

    2. Cook over medium heat, stirring constantly, until mixture comes to a full, rolling boil.

    3. Boil without stirring, until mixture reaches 234 degrees or forms a soft ball when dropped into cold water. ( ball should flatten when removed from water.)

    4. Remove from heat & add butter & vanilla; DO NOT stir.

    5. Cool to 110 degrees. Beat with a spoon until fudge thickens and looses some of it's gloss.

    6. Spread quickly into prepared pan; cool.

    7. Cut into squares.
