Rich Cocoa Fudge

List of Ingredients
- 3 c. sugar
- 2/3 c. cocoa powder
- 1/8 tsp. salt
- 1 1/2 c. milk
- 1/4 c. butter or margerine
- 1 tsp. vanilla
- 1/2 to 1 c. pecans or walnuts, optional
Instructions
- In 4 qt. saucepan, stir together suger, cocoa, salt & milk.
- Cook over medium heat, stirring constantly, until mixture comes to a full, rolling boil.
- Boil without stirring, until mixture reaches 234 degrees or forms a soft ball when dropped into cold water. ( ball should flatten when removed from water.)
- Remove from heat & add butter & vanilla; DO NOT stir.
- Cool to 110 degrees. Beat with a spoon until fudge thickens and looses some of it's gloss.
- Spread quickly into prepared pan; cool.
- Cut into squares.
