Seafood Fettuccini

List of Ingredients
- 2 sticks of butter
- 3 celery ribs, chopped
- 1/4 c. flour
- 2 lbs. Crawfish or shrimp
- 1 lb. velveeta cheese (hot)
- 1 lb. fettuccini noodles
- parmesan cheese
- 2 large onions, chopped
- 2 large bell peppers, chopped
- 4 tsp. parsley
- 1 quart half & half cream
- 3 cloves garlic, diced
- salt and red pepper
Instructions
- In a large pot, melt butter,add vegetables and saute' until tender.
- Add flour, blend into the butter mixture. Cook 15 minutes, stirring often.
- Add parsley and seafood.
- Cover and cook for 20 minutes.
- Add half and half, cheese, garlic, salt and pepper(to taste).
- Cover and cook on low for 20 min.
- Add cooked fettuccini noodles to sauce.
- Pour into a baking dish. Sprinkle with parmesan cheese on top.
- Cover wil foil and bake at 350 for 1/2 hour.
