    List of Ingredients


    • 4 lbs lean ground beef
    • 2 tsp. garlic powder
    • 1 Tbsp. liquid smoke
    • 1/4 cup mortons quick cure
    • 1 Tbsp. peppercorne


    Instructions


    1. Mix meat with cure salt and store in covered container in the ref. over night.
    2. The next day mix in the liquid smoke, garlic powder and peppercorne into the meat mixture and mix well.
    3. Roll the mixture into a log and wrap in cheesecloth.
    4. Cook for 4 hours at 225 degrees. Turn the meat log over after it has cooked for 2 hours.
    5. Chill slice and serve.


    Final Comments


    We love this for sandwiches for Christmas or finger snacks. This is also good for any party or the superbowl.
