Grilled Chicken Fajitas

List of Ingredients
- 2 Tbl. fresh lime juice
- 1 Tbl. mild chili powder
- 2 tsp. olive oil
- 1/2 tsp. salt
- 1/2 tsp.pepper
- 1 pound skinless, boneless chicken breast
- 1 lb. tomatoes, coarsely chopped
- 4 1/2 - ounce can chopped green chilies, drained.
- 1/2 cup chopped cilantro
- 1/3 cup diced avacado
- eight 8-in.flour tortillas
- 4 cups shredded romaine lettuce
Instructions
- In a sturdy plastic bag, combine 1 tbl. of lime juice, the chili powder, oil, 1/4 tsp. salt and the pepper. Add the chicken, squeeze the air out of the bag, seal, and marinate at room temp. for 30 min or up to 12 hours in the refrigerator.
- In a medium bowl, combine the tomatoes, green chilies, cilantro, avacado, remaning 1 Tbl. lime juice, and remaning 1/4 tsp. salt.
- Pre-heat the grill to a medium heat. Spray the rack-off the grill- with nonstick cooking spray. Grill the chicken, covered, turning once, for 8 min or until the chicken is cooked through. Place the tortillas on the grill for 30 seconds to warm through.
- Thinly slice the chicken. Place 2 tortillas on each of 4 plates, spoon chicken slices ontp the tortillas with the tomato mixture and lettuce, and serve.
