    List of Ingredients


    • 1/3 c. olive oil
    • 2 c. long grain white rice
    • 1 lb. cheddar cheese
    • 1 lb. lean ground beef
    • 1 med. onion, diced
    • 1 clove garlic, minced
    • 2 tsp. salt
    • 1/2 tsp. balck pepper
    • 3 c. hot water
    • 1 can tomato sauce
    • 1 can rotel tomatoes
    • 3 Tbsp. chili powder
    • 1 tsp. cumin


    Instructions


    1. In a small skillet brown rice in olive oil and set aside.
    2. In a large skillet brown beef with onions, garlic, salt & pepper and other spices.
    3. Add hot water, tomato sauce & rotel tomatoes. Bring to a boil.
    4. Add browned rice and boil for 5 min.
    5. Cover and simmer for aprox. 30 min.
    6. Remove from heat; add cheese and let stand until cheese is melted.


    Final Comments


    Pinto beans can be added to the casserole if desired.
