Spanish RIce Casserole

List of Ingredients
- 1/3 c. olive oil
- 2 c. long grain white rice
- 1 lb. cheddar cheese
- 1 lb. lean ground beef
- 1 med. onion, diced
- 1 clove garlic, minced
- 2 tsp. salt
- 1/2 tsp. balck pepper
- 3 c. hot water
- 1 can tomato sauce
- 1 can rotel tomatoes
- 3 Tbsp. chili powder
- 1 tsp. cumin
Instructions
- In a small skillet brown rice in olive oil and set aside.
- In a large skillet brown beef with onions, garlic, salt & pepper and other spices.
- Add hot water, tomato sauce & rotel tomatoes. Bring to a boil.
- Add browned rice and boil for 5 min.
- Cover and simmer for aprox. 30 min.
- Remove from heat; add cheese and let stand until cheese is melted.
Final Comments
Pinto beans can be added to the casserole if desired.
