I freeze the brown bananas so that I have enough for this recipe, and then just thaw before using.
List of Ingredients
1 c butter
2 c sugar
4 eggs
4 c flour
2 tsp baking soda
8 - 10 ripe bananas
Recipe
Cream butter and sugar together until smooth. Add remaining ingredients and blend well. Scoop batter into small greased muffin tins. Fill about 2/3 full. Bake at 350 degrees for 16 - 20 minutes.
