1/2 stick butter
3 eggs
3/4 c milk
3/4 c flour
1/4 tsp salt
1/4 tsp vanilla
1/4 tsp cinnamon
1/4 tsp nutmeg
Recipe
Heat a 10 inch oven-proof dish or skillet in the oven at 425 degrees. When hot, put 1/2 a stick of butter in the dish and put it back in the oven. Whip the eggs until foamy. Add milk, flour, salt and vanilla to the eggs. Remove the dish with the melted butter from the oven (it should be melted but not burnt). Sprinkle the cinnamon and nutmeg onto the melted butter. Roll the dish around to spread the butter evenly. Pour the batter into the hot pan immediately and put it back in the oven. Bake for 25 minutes. It will puff up and look amazing. Make sure everyone is standing around when you pull it out of the oven as it will deflate as you cut it. Serve in wedges with fruit (blueberries, strawberries, sliced bananas, etc...) butter pats or powdered sugar.
