Microwave Peanut Brittle

List of Ingredients
1 c salted peanuts
1 c granulated sugar
1/2 c white corn syrup
1 tsp butter
1 tsp vanilla
1 tsp baking soda
Recipe
Combine the sugar and corn syrup in an 8 cup measure and cook for 4 minutes at 100% power. Add the peanuts and continue to cook another 3-4 minutes. Next, add the butter and vanilla and continue to cook for an additional minute. Finally, add the soda and gently stir until mixture is light and foamy. Pour and spread quickly on a flexible cookie sheet lined with parchment paper. Stretch brittle at the edges if you like peanut brittle thin. Cool for a half hour or so and then break into small pieces to finish cooling. Store in an air tight container.
