Barbecued Tofu with Onions and Peppers (Vegetarian)

List of Ingredients
1 lb firm tofu, drained, frozen and thawed
1/2 c reduced-sodium ketchup
1/4 c Dijon mustard
3 Tbsp water
1 Tbsp safflower or canola oil
1 Tbsp minced garlic
1/4 tsp ground black pepper
1/4 tsp liquid smoke
hot-pepper sauce
2 c thinly sliced onions
2 medium green peppers, seeded and cut into strips
3 c hot cooked brown rice
Recipe
Preheat the oven to 375 degrees. Set the tofu between two plates and place a heavy pot on top. Set aside for 10 minutes to release excess water. Meanwhile, in a shallow 2 quart no-stick baking dish, combine the ketchup, mustard, water, oil, garlic, black pepper, liquid smoke and hot-pepper sauce to taste. With the long side of the tofu facing you cut the tofu into 1/2 inch slices starting from the short end. Dip the slices on both sides in the ketchuup mixture. Remove to a plate and set aside. Toss the onions in the ketchup mixture. Remove to a plate and set aside. Toss the green peppers in the remaining ketchup mixture and leave on the bottom of the baking dish. Arrange the tofu in one layer on top of the peppers. Top with the onions. Cover with foil and bake for 15 minuts. Uncover and bake for 15 minutes more. Serve over the rice. Makes 4 servings.
