    Connie's Tamale Pie

    Recipe Introduction

    Easy and delicious. A kid favorite.

    List of Ingredients

    Filling:
    1 lb ground beef
    1 small onion, chopped
    1 (16-oz) jar salsa
    1 pkg taco seasoning
    1/3 c water
    1 c frozen corn
    1 (2.5-oz)can sliced black olives (optional)

    Crust:
    1 c corn meal
    1 (12-oz)can evaporated milk
    1 (4-oz) can diced green chiles
    2 c shredded cheddar cheese
    1 tsp salt

    Recipe

    Filling:
    Cook beef and onions until browned. Drain if necessary. Stir in salsa, water and taco seasoning. Mix well and bring to a boil. Reduce heat to low, cook stirring occasionally for 3-4 minutes. Add corn and olives. Remove from heat.
    Crust:
    Combine cornmeal, evaoporated mild, chilies, and one cup of the cheese and salt in medioum saucepan. Cook over medium-high heat, stirring frequently for 5-7 minutes until thickened. Spoon filling into 12 x 8 inch or 8 x 8 inch ungreased baking dish. Spread cornmeal mixture on top. Bake for 25 minutes. Then, sprinkle with remaining cheese and bake for an additional 5-10 minutes or until cheese melts.
