    Meatless Sloppy Joes (Vegetarian)

    List of Ingredients

    1 lb firm tofu, drained, frozen and thawed
    1 1/2 tsp canola oil
    2/3 c chopped onions
    2/3 c chopped green peppers
    1/3 c thinly sliced celery
    1(16-oz) can reduced-sodium tomato sauce
    4 tsp cider vinegar
    2 1/2 tsp mustard
    3/4 tsp Worcestershire sauce
    1 tsp sugar
    salt and ground black pepper
    4 whole-wheat or multi-grain buns

    Recipe

    Set the tofu between 2 plates and place a heavy pot on top. Set aside for 10 minutes to release excess water. Pat dry. Coarsely mash or crumble the tofu with a fork. In a medium no-stick skillet over medium heat, warm the oil. Add the tofu, onions, green peppers and celery. Saute for 8 minutes, or until the tofu is well-browned and the vegetables are tender. Stir in the tomatoe sauce, vinegar, mustard, Worcestershire sauce and sugar. Cook, stirring frequently, for 5 minutes. Season to taste with the salt and black pepper. Mound equal amounts of the mixture onto the buns. Makes 4 servings.
