    Spaghetti Carbonara

    List of Ingredients

    8-oz thin spaghetti
    1 lb sliced bacon, cut in 1-inch pieces
    2/3 c chopped onion
    1 can (4-oz) sliced mushrooms, drained or fresh
    1/4 c butter
    1 c (4-oz) shredded cheddar cheese
    salt and pepper
    3 egg yolks, lightly beaten

    Recipe

    In pot, cook spaghetti per directions. Drain, keep warm. In skillet cook bacon over medium, heat until crisp. Remove from pan with slotted spoon and drain on paper towels, set aside. Reserve 2 Tbsp bacon drippings in skillet. Discard remainder. Add green onions and mushrooms; saute over low heat for 2 minutes. Remove and set aside with bacon. In same skillet, melt butter, add spaghetti, bacon, onions and mushrooms mixture, cheese and seasoning. Toss lightly to combine. Add egg yolks gradually and mix well. Cook for another couple of minutes and serve. 6 servings.
