    Eight Day Sunshine Pickles

    Source of Recipe

Megan M. Springs mom of Marcus Hahn - 2nd - Howard

    Recipe Introduction

This is a recipe that I received from my mother in law in Canton, Tx. Although I have tried hers, this is the first year I had cucumbers in my garden so I have just recently made my very first batch. I would love to hear what you think.

    List of Ingredients

    1 1/2 c canning salt
    10 c water
    10 c vinegar
    1 grape leaf
1 sprig of fresh dill (you can use dried dill weed)
    1-2 hot peppers
    1 clove garlic
several small pickling cucumbers (if they are so large that you have to chunk them up to fit in the jar they may tend to be more salty when finished)

    Recipe

Boil together canning salt and water until salt dissolves. Set aside and let cool. Add vinegar. In the bottom of each jar add 1 grape leaf, 1 clove garlic, 1 sprig of fresh dill, and 1-2 hot peppers to taste. Pack cucumbers in jars, pour solution over cucumbers. Seal. Set out in sun for at least 8 days. If it is cloudy out side, you can leave them out longer. [Tip: I like the large or wide mouth jars for veggies and pickled things because it is not only easier to pack them in but easier to get them out of too].
