    Crock Pot Spinach Casserole (Vegetarian)

    Recipe Introduction

    I got this recipe out of my favorite vintage crock pot cookbook. We love this in my family as a vegetarian main course. Use one package of spinach if you'd like. This gives it a more quiche like consistency.

    List of Ingredients

    1 or 2 (based on taste) (10-oz) pkg of frozen-chopped and thawed spinach
    2 c of cottage cheese (low fat is good)
    1/4 c of butter or margarine cut into pieces
    1 1/2 c of cheddar cheese
    3 eggs beaten
    1/4 c of flour
    1 tsp salt







    Recipe

    Thoroughly combine all ingredients in mixing bowl. Pour into greased (spray or butter works) crock pot. Cover and cook on high 1 hour, then turn to low for 4 to 5 hours (recipe may be doubled if desired). Eat and enjoy!
