    Slam Dunk Veggies

    Recipe Introduction

    These veggies have a yummy, crispy coating and are really great when dunked in pizza sauce! Get the kids to help with this one!

    List of Ingredients

    2/3 c seasoned fine dry bread crumbs
    2 Tbsp grated Parmesan cheese
    1/8 tsp salt
    2 egg whites, slightly beaten
    1 Tbsp milk
    4 c cauliflower florets and/or broccoli florets
    2 Tbsp butter or margarine, melted
    1 (15-oz) can pizza sauce

    Recipe

    Preheat oven to 400 degrees. Lightly coat a 15 x 10 x 1 inch baking pan with nonstick cooking spray and set aside. In a large resealable plastic bag, combine bread crumbs, cheese and salt. In another large plastic bag, combine egg whites and milk. Add vegetables to the plastic bag with the egg mixture. Close bag and shake to coat well. Add vegetables to plastic bag with crumb mixture. Close bag and shake to coat well. Place coated vegetables on the prepared baking pan. Drizzle melted butter over vegetables. Bake about 20 minutes or until golden brown, stirring twice with a wooden spoon. Meanwhile, heat the pizza sauce in a saucepan or in the microwave. Serve vegetables with warm pizza sauce.
