    Stollen

    Source of Recipe

    booklet from südzucker/changes from sanni

    List of Ingredients

    8 cups flour/ 1 kg Mehl
    ½ cup sugar/ 120 gr Zucker
3 oz. Yeast ( do yourself a favor and use fresh)/ 2-1/2 Würfel Hefe ( bitte frische )
1-2/3 cups warm milk/ 400 ml warme Milch
    1 tsp. salt/ 1 Teelöffel Salz
    1 tbsp. vanilla / 2 Päckchen Vanillezucker
    2 eggs / 2 Eier

    1-2/3 cups butter / 400 gr Butter
    1-1/2 cups plus 2 tbsp. flour/ 200 gr Mehl

4 oz. candied lemon peel / 120 gr Sukkade
4 oz. candied orange peel / 120 gr Orangeat
    12 oz. raisins / 360 gr Rosinen
    6 dl Rum or O-juice / 6 dl Rum oder O-Saft
4 oz. chopped almonds / 120 gr gehackte Mandeln

2/3 cup butter, melted / 150 gr Butter, geschmolzen
5 oz. powdered sugar / 150 gr Puderzucker

    Recipe

Mix Rum, fruits and nuts, let soak.
Make a dough of the first 7 ingredients and let it rise 40 minutes. Meanwhile mix the butter and flour (works great in food processor w/ blade). Knead the butter-mix in about 3 batches into the dough, let rest 15 minutes.
Knead in the fruits, use your hands rather than a mixer, let rise about 30 minutes.
Divide in two pieces, form two Stollen, put them in a greased Stollen-pan, if you have one. Let rise about 45 minutes, bake in a 400° oven (preheated) for 45-50 minutes.
Turn onto rack and brush with melted butter immediately, then sift powdered sugar over, repeat this until all butter and sugar are used up.
Once cool wrap in foil and let rest at least one week before slicing for best flavor (it never even lasts that long at our house…J.
I can tell you, I hate Stollen, but I like this one, so it must be a really good recipe.
    Have fun and happy baking!
