Sanni's Good Morning Buns
List of Ingredients
about 6 cups flour (I use what I have on hand, most times two cups whole wheat flour, 3 cups unbleached wheat flour and one cup cracked wheat)
two packages dry yeast
2 tsp. salt
3 tbsp. sugar, honey or barley malt syrup
2 tbsp. butter
1-1/2 to 2 cups warm milk
1/3 cup sunflower seeds
1/3 cup millet
1/4 cup old fashioned oats
poppy or sesame seed for sprinkling
egg whites for brushingRecipe
I can't eat white bread in the mornings so I developed these.They aren't light and fluffy but satisfying for your teeth.
Directions:
Mix flours, sugar, salt, yeast and seeds.Add butter and milk.I add the milk gradually to see how much is absorbed.Stir with wooden spoon until sticking together, turn out onto a kneading surface and knead about 10 minutes(this dough makes muscles!!!).Let rise about 1 hour.Shape into buns, I like cut-buns, for these you divide the dough in two halves, roll each into a 11-inch rope, flatten the rope slightly and cut each rope in 8 pieces.Don't cut too carefully, they are supposed to look a little uneven.Flatten each piece a little and put on parchment-lined baking sheets.For soft-sided buns let them touch sides, for hard-sided buns wide apart.Let rise until real puffy, 1-1/2 hours or so.Brush with beaten egg white and sprinkle with seeds of your choice or leave plain.
Preheat oven to 400°, put sheet into oven, throw some ice-cubes on bottom, lower temperature to 350° and bake for about 20 minutes.Cool on rack.
