Very tender Apple Cake
List of Ingredients
1/2 cup butter,soft
1/2 cup plus 1 tbsp. sugar,fine
1 tsp. vanilla
pinch of salt
1/2 tsp. lemon extract
3 eggs
1-3/5 cups flour
1-1/2 tsp. baking powder
1-2 tbsp. milk
1-1/2 pounds apples, peeled, cored, quartered
1 tbsp. melted butter
2 oz. raisins, if desired
Glaze:
2 tbsp. strained apricot jam
1 tbsp.waterRecipe

I like this one very much, it resembles a frozen cake from Dr.Oetker which is my very favorite fresh-fruit-cake.I include my variations.
Directions:
Cream butter, add sugar and vanilla gradually.Add lemon.Beat in eggs, beating 1/2 a minute after each addition.Sift flour with baking powder and stir in together with milk.Be sure to use low or medium speed only.The batter should be pretty stiff.Spoon in a greased, floured 11-inch springform pan.
Make slashes into round side of apple-quarters, like for hasselback potatoes.Arrange apples on batter.Brush with melted butter and sprinkle with raisins, if desired.
Bake in a preheated 350° oven for about 45 minutes.
Bring jam and water to a boil and brush cake with this once it's out of the oven.
Dr.Oetker's famous cherry cake:
Ommit the apples,the melted butter and apricot glaze.Use 20 oz.sour cherries instead.Stir one cup chocolate shavings or chocolate chips (which are not available in Germany:-(
into batter.Bake as directed.
Apple-Cherry-Poppy-Cake:
Ommit apples,melted butter and apricot glaze.Stir 1/4 cup poppy seeds into batter.Arrange 1-1/2 pounds fruits, half apple quarters, half cherries on batter.Bake as directed.
