Fish Rice Tomato Bake
List of Ingredients
1 lb. frozen whitefish fillet, thawed
5 large tomatoes
1 cup rice
onion powder, salt , pepper
1 tsp. olive oilRecipe
The only way I can get whitefish in my stomach (o.k.sole or everything else over 35 DM per lb. goes in easily without this trick...).Low cal, cheap and easy to prepare...for what else do you ask?
Directions:
Cut fish in stripes.Dizzle with some lemon juice or vinegar.Grease dish with half of the oil, layer with half of the sliced tomatoes.Prepare rice and pour over tomatoes.Season.Put fish stripes over rice, season.Put rest of the tomatoes over it and dizzle with remaining oil.Bake at 400° for 40 minutes, let stand five minutes before serving.
Leftovers can be reheated very well.
