Recipe Introduction
Though I don't like these too much (IMO too flat and too chewy) my Dad loves them. And they're not bad, just not what I want a chocolate chip cookie to be like!
List of Ingredients
¾ cup unsalted butter, room temperature : 90 grams
¼ cup margarine, room temperature : 30 grams
1 cup packed brown sugar : 110 grams
2/3 cup sugar : 70 grams
1 large egg, plus 1 egg yolk : 1 medium to small egg
1 tsp vanilla
2 cups flour : 125 grams
2/3 cup rolled oats, finely ground : 1/3 cup
1 tsp baking soda
½ tsp salt
1 1/3 cups chocolate chips : 120 grams
1 1/3 cups walnut pieces : about 70 grams
Recipe
Preheat oven to 350F. Line 2 large baking sheets with parchment paper. In
bowl of mixer, cream butter and margarine fill fluffy. Add the sugars and
mix till incorporated. In small bowl, beat egg and egg yolk. Add the
vanilla. Slowly add the egg vanilla mixture to the creamed mixture and
combine well. In separate bowl, combine flour, oats, baking soda and salt.
Add the dry ingredients to the creamed mixture and mix to blend well. Remove
beater from mixer and using wooden spoon, gently incorporate chocolate chips
and walnut pieces into dough, being careful not to break up walnuts. Drop by
tablespoons 2 ½ inches apart on prepared baking sheets. Bake for 15 minutes
or till golden.
The metric ingredients are for half the batch (around 20 cookies)
