Yoghurt Cheese
I make this quite often because it's such a good substitute for ricotta cheese, a lot cheaper!I usually use lowfat yoghurt but I believe you could use any kind.Have fun!

Yoghurt
clean kitchen towel (no terry cloth) or cheesecloth
colander
large bowl
enough space in your refrigeratorRecipe
Place colander over bowl, line colander with towel, pour yoghurt into towel, fold edges over yoghurt and drain about 20 hours or to desired thickness.Stir yoghurt a couple times while draining.Use like ricotta.
