Mehlbeutel (Big Dumpling)
List of Ingredients
2 cups milk
1 tsp. salt
8 eggs
4 cups flour
1 tbsp. grated lemon zest
10 oz.smoked bacon (no slices)
3 tbsp. sugar
1/2 cup melted butter

This one is very typical for Schleswig-Holstein.People here seem to like the contrast of hearty and sweet.You might be "threatened" by the amount of eggs and fat generally but as we have a pretty rough climate and people here were mostly farmers they needed that.My Dad loves this, my mom hates it, I like it with fruit instead of bacon.If you want something typical NorthGerman and low-budget as well, try it!
Directions:
Stir first five ingredients together to make a smooth dough.Let rise 1 hour.Soak a kitchen towel (no frottee)in hot water and drain thoroughly.Lay in a bowl.Fill dough in towel and knot ends together, leaving a little space for the dough to rise.
Fill a large pot with water, add bacon and bring to boil.
Hang the towel over a wooden spoon and hang in pot so that it doesn't touch the bottom of the pot.Boil - half covered - for two hours, adding evaporated water occasionally.Water should always boil.When done put on a plate and let cool ten minutes.Remove towel and slice like a cake.
Serve with bacon, melted butter and sugar.Normally a fruit sauce is served with it as well.When I eat it I never boil it with bacon.
