Good Morning Apricot Muffins
List of Ingredients
1-1/2 cup bran cereal
1-1/4 cup low fat plain yoghurt
1 egg
1/2 cup orange juice
1 tsp. grated orange zest (can be left out)
1/3 plus 2 tbsp. sugar
1/4 cup oil
1/2 cup chopped,dried apricots
1 cup flour
1 cup whole wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. saltRecipe

One of my fav breakfasts.They have a very buttery taste though they contain no butter at all.They freeze well.
Directions:
Grease and flour 12 muffin tins.
Combine cereal and yoghurt, crush cereal well, let stand 5 minutes.Beat together with egg, oil, orange rind and juice, sugar and apricots.
Mix dry ingredients in large bowl.
Stir cereal mix into dry mix just until dry mix is moistened.
Spoon in muffin tins.
Bake in a preheated 400° oven for about 20 minutes, let stand in pan some minutes, remove, cool on rack.
