    Low-Fat Blueberry Muffins

    List of Ingredients




    2 cups flour
    2-1/2 tsp. baking powder
    pinch of salt
    1 cup frozen blueberries
    1/2 cup sugar plus artificial sweetener equal to 1/4 cup
    1 cup lowfat sour cream
    2 large egg whites
    2 tbsp. oil

    Don't compare these to fullfat muffins but for a nutritious lowfat snack or breakfast they're fine, especially fresh from the oven.Plus they freeze well so fresh-from-the-oven is no problem.

    Directions:
    Combine dry ingredients and berries in large bowl.Combine wet ingredients and beat well.Add wet to dry mix and stir until combined , batter will be quite stiff but that's o.k.
    Spoon dough in greased, floured muffin tins (12) and bake in a 400° oven for about 20 minutes.Let cool on racks.
