    Chicken Rice Stew

    List of Ingredients

    2 boneless, skinless chicken breasts
    10-ounce can fat free vegetable broth
    2 carrots, diced
    1 onion, chopped
    1/4 cup chopped fresh parsley
    6 cups water
    1 cup brown rice, uncooked
    2 stalks celery, diced
    10-ounce package frozen peas
    1/2 tablespoon poultry seasoning

    Recipe

    Add chicken breast to water in large soup pot. Bring to a boil, reduce heat and simmer 15 minutes. Remove chicken from pot to cool. To simmering water add rest of ingredients. Bring to a boil, reduce heat to low, and cover pot. When chicken is cool, cut it into small pieces and return to pot. Continue to cook for apprpoximately 45 minutes.

    Serves 6
