Hawaiian Chicken

Recipe Introduction
This is one of my favourites ... I originally took it from a cook book; I've modified it slightly so that it suits my tastes ... I've shown the changes in brackets). If you like a spicier dish, I'm sure you could add some type of hot sauce to it. Its the one dish I make that I'm often asked to bring to potluck dinners.
List of Ingredients
1/8 C margarine (I usually omit this and it still turns out)
2 C. brown sugar (I often use a bit less)
1-2 T. cornstarch
1/2-1 pkg Onion soup mix
juice from 1 tin pineapple chunks
3/4 C. water
(I add 1/4 C. vinegar and 2 T. soya sauce too as I like a more sweet/sour flavour)Recipe
Mix ingredients and bring sauce to boil to thicken (this is optional ... I usually mix together & pour over chicken).
In baking dish: layer raw chicken pieces (I use boneless, skinless chkn cut into small pieces), pineapple chunks and vegetables. (I often use a combination of red/green peppers, bamboo shoots, water chestnuts, snow peas, carrots, celery, onions). Pour sauce over all and stir. Bake uncovered for approx. 2 hrs at 325 degrees F (I usually stir partway through and cover with tinfoil if it looks like its drying out ... I'm not sure it really needs the full 2 hrs). Serve with rice. (If using frozen snow peas, I usually add them during the last 1/2 hr of cooking; sometimes I add almonds or cashews as well). This recipe re-heats quite well in the microwave too.
