ALMOND MUSHROOM RICE

I've made this with regular white rice as well as basmati rice. I usually just use one large onion chopped … can't be bothered measuring! I've also used cashews instead of almonds and am sure you could even use baking peanuts.
List of Ingredients
1 C uncooked rice
1 C chopped onion
4 T butter/margarine
2 C beef bouillon
1/4 tsp pepper
1/2 C sliced almonds
1 can sliced mushrooms
Recipe
Cook onions in 2T butter til tender. Add rice and continue cooking until golden. Add bouillon and pepper. Stir well and heat til boiling. Cover, reduce heat and simmer for 15 mins or til liquid has been absorbed. Saute almonds and mushrooms in remaining butter. When rice is tender, add almonds and mushrooms to rice, tossing lightly.
