Mexican Potato Casserole

1/2 lb. extra lean ground beef
2 green peppers, seeded and chopped
8 green onions sliced (can use regular onion that equals 1/2 of a large onion)
2 tomatoes, chopped
1 T. chili powder
1 T. garlic powder
1/2 t. black pepper
1/4 t. salt
2 large baking potatoes (scrubbed and thinly sliced with skins on)
3/4 c. fat-free cheddar cheese, shredded
Recipe
Preheat oven to 350. Spray a 9x13-baking pan with nonstick cooking spray; set aside.
In large nonstick skillet, brown ground beef, bell peppers and green onions; cook, stirring as needed, until the beef is brown and the vegetables are softened, about 6-8 minutes.
Add tomatoes, chili powder, garlic powder, salt and pepper; cook stirring as needed, until the flavors are blended--about 5 minutes.
Arrange 1/ of the sliced potatoes on the bottom of the baking dish; spread half of the meat mixture on top; cover with the remaining potato slices and then the remaining meat mixture on top. Cover with foil and bake 40 minutes; uncover and sprinkle evenly with the cheese. Bake until the potatoes are cooked through and the cheese melts, about 10 minutes.
**Note: If you use thinly slice potatoes the casserole is fully cooked when you take the foil off and just need to heat until cheese is melted.
