Recipe Introduction
I know this has an official name, but I can't remember it anymore. It is so easy and delicious. You can add cooked chicken or ground beef, but we like it this way as a side dish. Serve with a nice salad.
List of Ingredients
- 1 pkg corn tortillas
- 8 oz shredded cheddar cheese
- 8oz shredded montery jack cheese
- 1 small can diced chilis
- 1 medium onion, diced
- 3-4 cloved garlic, minced
- 1 pint half and half
- 1T butter
- 1T olive oil
Instructions
- Preheat oven to 350
- Melt butter in large skillet and add oil
- Saute onions and garlic until translucent
- meanwhile, tear tortillas into rouch wedges--about 6 per tortilla. Layer with cheeses in 9 X 13 pan--reserving 1/4 cup cheese
- Add diced chilis and most of pint of half and half to skillet mixture and heat through--DON'T BOIL!
- Pour skillet mixture over cheese and tortillas, top with remaining cheese
- Bake 45 minutes, or until top is lightly browned and bubbly.
