    Zucchini Cake

    Taken from 1979 issue of Southern Living Cookbook.

    List of Ingredients




    3 eggs, beaten
    1 cup vegetable oil
    2 cups sugar
    2 tsp vanilla extract
    2 cups all-purpose flour
    3 tsp ground cinnamon
    2 tsp soda
    1 tsp salt
    1/2 tsp baking powder
    2 cups peeled, coarsley grated zucchini

    Glaze
    1/2 cup powdered sugar
    2 tsp milk

    Recipe



    Pour batter into a greased and floured (I use Baker's Joy) 10-inch Bundt pan. Bake at 350º for 55 to 60 minutes. Allow to cool 20 minutes before removing from pan. If desired, spoon glaze over cake while still warm.

    Glaze:
    Combine ingredients, mixing until smooth. Spoon over cake while still warm.
