    Hashbrown Casserole

    This recipe was given to me by a very dear friend, Dottie Brett. I always take this to the reunion and rarely do I have any left to take back home. It appeared in the January 1998 issue.

    List of Ingredients

    1 2-lb package frozen hashbrowns, thawed
    1/3 cup margarine, melted
    1/2 cup chopped onion
    1 pint sour cream
    1 can cream of chicken soup
    3/4 tsp salt
    1/2 tsp pepper
    2 cups (1 lb) Velveeta Cheese

    Recipe

    Melt and pour margarine over thawed potatoes. Mix together remaining ingredients and pour over potatoes. Toss until potatoes are coated. Place in greased casserole dish. Top with one cup crushed potato chips. Drizzle another 1/3 stick of melted margarine over potato chips. Bake 1 hour at 350º.
