Sweet Potato Casserole
This recipe appeared in the January, 1998 newsletter.
List of Ingredients
3 cups cooked sweet potatoes
1/3 cup margarine
1 cup sugar
2 tsp vanilla
2 eggs, beaten
1/2 tsp salt
Topping
1 cup chopped nuts
1/4 cup flour
1 cup coconut
1/3 cup melted margarine
1 cup light brown sugar
Recipe
Mix together first 5 ingredients and bake in a casserole dish at 375º for 15 minutes.
Mix topping together and spread over baked potato mixture. Bake at 350º for 15 minutes.
