    Yellow Squash Casserole

    Yield: 4-6 servings.

    List of Ingredients




    2 lbs yellow squash, sliced or diced
    2 large onions, chopped
    1/2 cup margarine
    1 cup sour cream
    Salt & pepper to taste
    6 eggs, beaten well
    3 cups buttered bread crumbs

    Recipe



    Cook squash and onions in salted water with margarine until tender. Drain and mash. Add sour cream, salt & pepper, beaten eggs and 1/2 cup bread crumbs. Mix thoroughly and pour into greased, 3 quart casserole dish. Top with remaining bread crumbs. Bake for about 20 minutes at 350º or until bubbly and crumbs brown.
