Soft Zucchini Spice Cookies

1/2 Cup butter, softened
1 cup packed brown sugar
1 teaspoon vanilla
1 egg
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground clove
1/4 cup milk
1 1/2 cup grated zucchini
1/2 cup chopped walnuts
1/2 cup raisins
1 teaspoon orange zestRecipe
Preheat oven to 350º. Grease cookie sheets. In a large bowl, cream together the butter and brown sugar until smooth, then beat in the egg and vanilla. Combine the flour, baking powder, salt, cinnamon, nutmeg and cloves; stir into the creamed mixture alternately with the milk. Finally, mix in the Zucchini, walnuts, raisins and orange zest. Drop by heaping teaspoon on prepared cookie sheets. Bake for 12-15 minutes or until the edges are lightly browned.
