Blackeyed Pea Salad
This recipe appeared in the May, 1999 newsletter.
List of Ingredients
1 can blackeyed peas, rinsed
1/2 cup chopped onion
1/3 c chopped celery
1 small green pepper, chopped
2 plum tomatoes, diced
1/3 c raspberry or apple vinegar
1/4 c sugar
1/8 tsp ground black pepper
1/8 tsp salt
1 Tbsp. vegetable oilRecipe
Place all vegetables in a bowl. In a separate bowl, mix other ingredients until sugar is dissolved. Pour over vegetables. Cover and marinate for at least 3 hours.
