Cucumber Salad
This recipe appeared in the July, 1998 newsletter and was submitted by Melanie Sauls.
List of Ingredients
6 - 8 medium cucumbers
1 1/2 tsp parsley flakes
2 - 3 tomatoes
1/4 cup olive oil
1 onion
Vinegar
1 small jar olives (optional)
Salt & Pepper to taste
Recipe
Peel and slice cucumbers. Dice tomatoes. Slice onion and separate into rings. Add remaining ingredients. Pour vinegar over all, not quite covering. Toss until all ingredients are coated. Cover and refrigerate for 2 to 3 hours before before serving.
