    Frozen Tomato Sauce

    This recipe was taken from a Taste of Home bulletin board.

    List of Ingredients

    Fresh tomatoes from the garden

    Recipe

    Wash and cut the tomatoes in half, put in a large pan, and cook till they are very soft. Smash them with a potato masher as they cook down. When they are pretty much cooked down, put them thru a food mill, putting the "puree" back in the pan. At this point add 3-4 gloves of garlic. Cook this down for a while, just to thicken a little, then put the sauce in ziploc bags and put in freezer. Use this base to make pasta sauce, pizza sauce, soups, whatever!! It is a lot of work but oh so worth it. When you first start to run the tomatoes thru the food mill, you may want to pour the first cup or so into the sink if it is too watery.
