    Cream of Onion Soup

    Makes 4 servings

    List of Ingredients




    4 medium Onions, peeled and quartered
    1/4 tsp. dried Thyme
    3 Tbsp. Butter
    14-oz. can Chicken Broth
    1 Tbsp. All-purpose Flour
    1 cup Whole Milk
    1/2 tsp. Caraway Seeds
    Salt and White Pepper to Taste
    Croutons, optional garnish

    Recipe



    After peeling and quartering the onions, cut them crosswise into thin slivers. In a 3-quart saucepan over medium heat, melt the butter and saute the onion slivers until soft, but not yet browned, stirring frequently. This process will take 15 to 20 minutes. Add remaining ingredients and simmer for 20 minutes.
