Herb Vegetable Packets
Makes 4 to 6 servings
List of Ingredients
1 sheet (18" x 24") heavy duty aluminum foil
2 small onions, thinly sliced
1 tsp dried basil leaves
2 medium carrots, thinly sliced
1 tsp garlic salt
1 medium yellow or zucchini squash, thinly sliced
2 ice cubes
3 cups broccoli florets
2 tbsp margarine or butterRecipe
Preheat grill to medium-high. Center vegetables on foil sheet. Sprinkle with seasonings. Top with ice cubes and margarine. Bring up sides of foil and double fold. Double fold ends to form one large foil packet, leaving room for heat circulation inside. Grill 15 to 20 minutes in covered grill until vegetables are crisp-tender.
