Recipe Introduction

Another "hmmmm, what do I have on hand?" that ended up being pretty good.

List of Ingredients

1 can petite diced tomatoes
1 can 98% fat free cream of celery soup
1 cup vegetable juice
1 small zucchini, chopped
2 cups frozen mixed veggies, thawed
1 bouillon cube
1 cup water
1 small onion, chopped
1 clove garlic, minced
cooking spray


Recipe

Put everything except last three ingredients (onion, garlic, cooking spray) in crockpot. Spray small nonstick skillet with cooking spray and then saute onion until just translucent, add garlic and saute another 30 seconds or so. Add to crockpot. Stir all together, cover, and cook on low until veggies are tender.

Bouillon cube will dissolve as it cooks.
