    Easy Beef Soup

    Recipe Introduction

    This is one of those recipes born out of desperation - the cupboard was bare and I had to throw together something quickly. You can make it with ground beef instead, if that's what you have, just brown it first!

    List of Ingredients

    1 lb. stew beef (or 1 lb. lean cut steak or roast)
    3 carrots, peeled and coined
    3 small potatoes, peeled and diced
    1 1/2 c hot tap water
    2 beef bouillon cubes
    1 envelope onion soup mix
    1 can green beans, drained (regular or French style)
    1/4 c tomato sauce
    1/4 c red wine, optional
    1/4 cup barley (add an extra 1/2 cup of water), optional

    Recipe

    Trim beef and cut into even cubes, toss in pot (sear first if you prefer). Sprinkle onion soup mix over beef. Dump in coined carrots, diced potatoes and green beans. Dissolve bouillon cubes in hot water and pour over all. Pour in tomato sauce. Add red wine. Mix all ingredients together. Cover and cook 6-8 hours on low or 3-5 hours on high. Serve w/ fresh Italian bread and a salad.

    You don't have to add the wine but it really adds a lot to this dish.
