    3/4 lb. fresh Italian sausage
    2, 10 oz. pkg frozen chopped spinach, thawed and drained
    1, 15 oz. can cannellini beans, rinsed and drained
    1 small red onion, finely chopped
    3/4 c. evaporated skim milk
    1/2 c. grated Romano or Parmesan cheese
    1 tsp. grated lemon peel
    1 Tbsp lemon juice
    1/4 tsp. ground nutmeg
    1/8 tsp pepper
    1/3 c. fine bread crumbs
    2 cloves garlic, minced
    4 tsp. margarine, melted

    Recipe



    In a large skillet, cook sausage and onion until cooked thru, breaking up sausage into bite sized pieces. Remove from heat.

    Add to sausage in skillet the spinach, beans, milk, 1/4 c of the cheese, lemon peel and juice, nutmet and pepper. Transfer to a greased 2-quart casserole dish.

    For topping combine the bread crumbs, remaining 1/4 c. cheese, garlic and melted margarine. Sprinkle on top of casserole.

    Bake, uncovered, in a 375 F. oven for 35 minutes. 6 Servings

    Serve with cooked brown rice.
